Pop the cherries and brandy into a non-stick saucepan and set over a medium-low heat.
Stir in the sweetener and bring to a gentle simmer.
Allow to simmer over a low heat for 10 minutes
Using a slotted spoon, remove the cherries from the liquid and set aside.
Continue to simmer the liquid for a further 5-10 minutes, until the sauce has thickened and coats the back of a spoon.
Stir in the cherries and pop into sterilised jars.
Seal and store in the fridge for up to 5 days.
