British Summer. Where art thou British Summer?
So around 7-8 weeks ago, Iceland got in contact again and asked if I would be able to fancy up a BBQ recipe ready for the summer with strict instructions…..
“Please wait until the weather is suitable before posting this recipe”
And well, I got fed up of waiting. It’s not Mid July and I think I can count the amount of sunny days we’ve had on one hand.
Even the day I made these wasn’t THAT sunny but we made it work.
Whilst I was in Iceland picking up the The Butcher’s Market Chicken Portions for this recipe, I also stumbled upon this Zesty Bean Quinoa mix which I thought would go down a treat. I mean Iceland selling quinoa now? What a time to be alive.
The Zesty Bean Quinoa actually tuned out to be a bit of a treat and will definitely be going “straight in my basket” next time I go in. It also seems to be a bit of a hit with others based on the online reviews so don’t just take my word for it.
On to the main event though we have these juicy Chicken Tikka Style Drumsticks (although you could easily use breasts or thighs too).
I love a bit of spice but I also love to know what is going in my food. Sure, you can buy this stuff already done for you but who knows what additives and preservatives have gone into them. And when you have a recipe as easy as this, is it worth taking the chance? Probably not.
So next time you’re firing up the barbie, give this little spice mix a go and stick it on any chicken pieces you have lying around and I guarantee it will go down a treat.
Tandoori-Style Chicken Drumsticks
- 1/2 tsp curry powder
- 1/2 tsp crushed chilli flakes
- 1/2 tsp salt
- 1/4 tsp ground ginger
- 1/4 tsp paprika
- 1/4 tsp ground cinnamon
- 1/4 tsp turmeric
- 2 Tbsp water
- 8 chicken drumsticks
Combine spices and water and mix into a paste.
Place all ingredients into a food bag or large bowl and mix to combine, making sure all of the chicken is covered.
Cook on the barbie!
