If you follow me or Harry on Instagram, you might have seen that this lucky duck was whisked off to the Alexander House Hotel to celebrate our anniversary a few weeks ago.
We don’t really so much R&R, so this was a treat. We kicked back in the spa, got ourselves good and wrinkly in the outdoor jacuzzi before hopping over to the restaurant for a spot of bubbly and steak come dinnertime.There are few things we enjoy more than treating ourselves to a fancy meal out, but there’s one thing I’d sell my soul for, time and again…
A hotel breakfast buffet. Maybe it’s because I’m a not-so-secret piglet, and I love trying just a smidgen of everything. Salmon, bacon, all kinds of eggs, pancakes, fruit, yogurt, toast, pastries…
And always, always… Bircher Muesli. And I’m pleased as punch to report that Alexander House’s offering didn’t disappoint!Naturally, I helped myself to a couple of portions (the pots were fairly small) and promptly decided that I’d rather not wait until the next Breakfast Buffet Bonanza for another helping.
Fast forward a couple of weeks: I threw this together before bed, and woke up to the best breakfast I’ve had since the buffet. Big statement, I know.
Creamy, sweet, smooth, gently spiced and ever so slightly tangy from the lemon and apple. This is comfort food at its finest, if you ask me.
Plus, I awarded myself some bonus points for actually using some of my Homemade Applesauce in a recipe, rather than spooning it straight from the jar.The best thing about Bircher Muesli is its versatility. You can simply pick the fruit, nuts, spices you fancy (or have in the house) and run with it. It’ll almost always turn out pretty damn good.
I’m trying a Cherry Bakewell one next… if that’s not incentive enough to watch this space, I don’t know what is.

Spiced Apple Bircher Muesli
Ingredients
- 35 g rolled oats
- 5 g chia seeds
- 5 g ground flaxseed (optional)
- 2 tsp granulated sweetener
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/8 tsp ginger
- 1.5 tsp vanilla extract
- 120 g 0% fat Greek yogurt
- 60 ml unsweetened almond milk
- 1 Tbsp lemon juice
- 1 apple, grated
- handful raisins, optional
Instructions

In a kilner jar or bowl, stir together your oats, chia seeds, flaxmeal, sweetener and spices.

Add the yogurt, vanilla extract, milk, lemon juice, grated apple and raisins.

Stir until thoroughly combined.

Seal the jar / cover the bowl and leave overnight.

Come morning, top with extra fruit, nuts and a drizzle of honey or agave nectar.
