Most of the posts on my site are for recipes I’ve created, usually because that’s just what I fancied at the time. Since starting I have had more and more requests for certain food, particularly from online clients and those wanting their favourite recipes included in their nutrition plans.
I always enjoy spaghetti bolognese but it’s never something I’ve really craved but when a client requested it I thought I’d give it a bash and it turned out awesome! After taking a few ideas from recipes around the web I took what I believed to be the “best bits” and created my own, relatively low calorie, spaghetti bolognese using every day ingredients.
Spaghetti Bolognese
Ingredients
- 1 large onions, diced
- 1 tsp garlic, minced
- 500 g extra lean beef mince
- 15 g tomato puree
- 100 ml red wine
- 400 g chopped tomatoes
- 500 ml beef stock (1 cube)
- 1 tsp agave nectar (sub honey / sweetener)
- 1 Tbsp Worcestershire Sauce
- 200 g mushrooms, chopped
- 100 g carrot, sliced
- 1/2 tsp dried thyme
- 1 tsp dried oregano
- 1/2 tsp basil, dried
- salt & pepper, to taste
Instructions

Fry the onions in a non-stick pan over a medium heat for 5 minutes until soft and golden. Add the minced garlic and fry for a further 2 minutes.

Turn up the heat and fry the mince until it has browned. Add the tomato puree and fry for a further 2 minutes.

Pour in the wine and reduce to around a half.

Add the rest of the ingredients and spices and stir well.

Bring to the boil then simmer, covered for 30 minutes.

Uncover and continue to simmer for 30 minutes or until the sauce has thickened to the desired consistency.

Season to taste.

Serve with pasta or boodles / veggies.

For a veggie version, simply swap the beef mince for 500g Quorn Mince.
