After my middling lunch at the Love Fit Cafe in Brighton (you can read the review here) I took a stroll into Brighton to do some shopping for my flat.
“Beige” is probably the best way to describe my flat the moment, although my old dear did get me a bonsai tree for Christmas which is somewhat brightening up the place, I was on the lookout for something to add a bit of colour.
As per usual though i was sidetracked by food and remembered a couple of my clients had mentioned to me a cheap Asian supermarket off the beaten path in Brighton so I thought I’d give it a whirl.
This place was AWESOME, even though I couldn’t read half of it I could tell the majority of the food was authentic Asian cuisine at about a third of the price so I went ahead and picked up some goodies; soy sauce, oyster sauce, minced garlic. Everything you can buy in your local supermarket but twice the size and much, much cheaper.
Not only that but I made a ground-breaking discovery in Holland and Barrett around a week or so before in this;
I’m cool with artificial sweeteners (in moderation) and would much prefer them over the real thing to reduce the calorie count. I had a recipe in mind that called for all my Asian goodies plus brown sugar, so this all worked out perfectly.
Very simple recipe with only a few ingredients and best of all you don;t even need to watch it over. Just bung it all in the slow cooker and half an hour before the end give it a stir and it’s done! Goes great with rice, noddles or even in a stir fry!

Slow Cooker Asian-Style Chicken
Ingredients
- 1 kg chicken breast (4-5 breasts)
- 125 ml soy sauce (reduced salt)
- 85 ml oyster sauce
- 6 Tbsp Sukrin Brown Sugar Alternative
- 6 cloves garlic, minced
- 1.5 Tbsp cornflour
- 4 Tbsp water
- sesame seeds, for garnish
- spring onions, sliced for garnish
Instructions

Place the chicken,, soy sauce, oyster sauce, sugar and garlic in a slow cooker and mix until chicken breasts are covered.

Cook on high for 3 hours or low for 5 hours.

15 minutes before the chicken has finished cooking, mix the cornflour and the water before pouring into the slow cooker and allowing to cook off for the final 15 minutes.

Remove from the slow cooker and check to see if the chicken has been cooked through
Garnish with sesame seeds and spring onion.
