Doesn’t look or sound particularly appetising does it? Akin to something you may see served up in a school canteen I can assure you that this tastes nothing like it!

‘Sloppy Joes’ are a traditional American dish made with ground beef, onions and the best part…… Ketchup!! By switching to a reduced sugar and salt version we can reduce the calories whilst still getting the same great taste.

Ingredients

  • 500 g extra lean beef mince
  • 400 g chopped tomatoes
  • 100 g mushrooms, sliced
  • 50 g reduced sugar & salt ketchup
  • 1 red pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 Tbsp balsamic vinegar
  • 1 Tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1 tsp hot chilli powder
  • 1 tsp ground cumin
  • 150 ml beef stock
  • salt & pepper, to taste

Instructions

  1. Brown the mince over a high heat

  2. Reduce the heat to medium and fry the onion and garlic for 2-3 minutes until soft then add the peppers and continue to fry for a further 2 minutes

  3. Add the chopped tomatoes and mushrooms and cook for a further 2 minutes

  4. Add the rest of the ingredients and bring to the boil

  5. Reduce the heat and simmer for 30 minutes or until the sauce has thickened

  6. Season to taste

Traditionally served in a bun but be warned, it can get messy!!
