With the Great British Summer in full flow (all one week of it!) I thought I would share a simple, light, high protein recipe which is super quick to make and great as a snack or starter. This Prawn Pâté goes great on cracker breads or toast or you could even serve it on its own as a dip at a BBQ!
Add a little cayenne pepper to give it an extra kick!
- 100 g frozen prawns, cooked
- 50 g reduced fat cottage cheese
- 1 tsp lemon juice
- salt & pepper, to taste
- cayenne pepper, to taste (optional)
Thaw the prawns and drain of any liquid
Put all the ingredients in a food processor or blender and blend until you reach the desired consistency
