Peanut Butter Popcorn

What’s poppin’?

I know, I know, another homemade popcorn recipe. Change the record, right?

Wrong!

If you’ve already made your own popcorn, I’ve no doubt you’re already convinced.

If you haven’t  then I hate you tell you that you’ve been missing OUT.

My favourite homemade variety is a tie between this Peanut Butter number and my Salted Dark Chocolate Popcorn, but Harry loves my cinnamon spice stuff too.

Anyhow, my popcorn consumption is on a steady incline, and I’m starting to worry that we’re creeping into Secret Eater territory. Especially with my gent being away for a couple of weeks.

So, I figured if I blog about it, it’s all in the name of recipe research. Right?

Peanut Butter Popcorn

Cook Time 5 minutes

Ingredients

  • 65 g popcorn kernels (1/4 cup)
  • 3 Tbsp powdered peanut butter
  • 1 Tbsp coconut oil
  • 3 tsp sweetener
  • 1 tsp agave nectar (sub. for honey)

Instructions

  1. Set a large lidded pan over a medium-high heat until hot.

  2. Pour in your kernels and cover with the lid, leaving a tiny gap to allow steam to escape. (Tiny - you don't want the popcorn escaping!)

  3. Once you can count 5 seconds between kernels popping, remove from the heat.

  4. Add the coconut oil, replace the lid and shake well to coat the popcorn.

  5. Sprinkle over the powdered peanut butter and sweetener, pop the lid back on and shake again.

  6. Use a spoon to pick up any powder from the bottom of the pan and stir it into the popcorn.

  7. Add a tsp of agave nectar and shake again. All of the powder should now be stuck to the popcorn!

  8. Serve immediately.
