Pork Tenderloin is a pretty nifty little cut of meat.
You can pick it up relatively cheap, and if you cook it right, it’s melt-in-the-mouth good.
Our go-to tenderloin recipe is pulled pork, but we’ve gone a little left field here. Dare we say it… a touch classier.
Great for a fancier meal prep, date night or an alternative to your traditional Sunday Roast, you could knock up this slow cooker recipe with your eyes closed. (Not literally. Don’t do that.)

Slow-Cooker Parmesan & Herb Pork Loin with Chunky Tomato Sauce
Ingredients
- 240 g onion, chopped
- 250 g fennel, chopped
- 180 g carrot, chopped
- 250 ml red wine
- 800 g chopped tomatoes
- 60 ml chicken stock
- salt & pepper, to taste
- 15 g Parmesan cheese, finely grated
- 1 tsp dried rosemary
- 1 tsp dried oregano
- 1 tsp dried parsley
- 500 g Pork Fillet
Instructions

Set a pan over a medium heat and add some low-calorie cooking spray.

Add the onion, fennel and carrot to the hot pan and saute for 5 minutes, or until softened.

Turn the heat to high and stir in the wine. Bring to the boil for 2-3 minutes, stirring occasionally, until reduced by half.

Pour in the tomatoes and chicken broth, bringing to a simmer before seasoning well with salt and pepper. Transfer to your slow cooker.

Combine your Parmesan with the herbs and scatter over a breadboard.

Roll the Pork fillet across the mixture, pressing to ensure the meat is well-coated on all sides.

Lay the pork on top of the tomato mixture and slow-cook for 1.5-2.5 hours, depending on the strength of your slow cooker.

Once cooked, carefully remove the pork from the slow cooker and allow to rest for 5 minutes before slicing and serving on top of the tomato sauce.
