I’ve recently started to do most of my shopping online. Not only to save me the hassle of getting there and back and the hustle and bustle of the shop itself but also to save me time. I could quite easily go into a supermarket and lose myself for a few hours looking at all the different ingredients and trying to discover the next best ingredient!
The only pain with online shopping is the “substitutions” they make if they don’t have something in stock. I actually ordered the non flavoured quark but they sent a lemon one instead and thought what the hell, let’s give this a shot. WOW am I glad I took it. I’m not usually a fan of lemon flavoured desserts but this one really changed my mind, it’s taken me a while to take this shot as I kept making it and eating it before I had the chance!
Lemon Protein Cheesecake
Ingredients
- 400 g extra light soft cheese
- 500 g lemon flavoured quark
- 4 whole eggs
- 20 g granulated sweetener
- 40 g vanilla protein powder
- 60 ml almond milk
Instructions

Make sure all ingredients are at room temperature before you begin.

Mix all the ingredients in a large bowl and whisk using an electric whisk for 3-5 minutes until small air bubbles form.

Pour into an 8 inch/20 cm non stick spring form baking tin.

Place tin in a non preheated oven on the middle shelf and turn heat to 140C/310F for 35 minutes.

Turn the heat down to 80C/190F for a further 60 minutes.

Remove from the oven, allow to cool completely and place in the fridge overnight.
Recipe Notes
Use a non flavoured or vanilla flavoured quark as a base to create your own flavours.
You can try replacing some of the whole eggs for egg whites (2 whites = 1 whole) for a lower fat but much drier cake.
This doesn't have a base as I wanted to keep the calories down but Anna over at Protein Pow highly recommends one from her dark chocolate and almond protein cheesecake!
