Kofta Kebabs

Yep, no arguing it now. Summer’s here!

That most glorious time of year where we’re scrambling for the last bag of charcoal at Tesco’s to make the most of the fleeting English sun. Finally.

We got a bit of a head-start this year. We wanted  to be poised and ready with some Barbecue blinders the minute  things warmed up a little, so that YOU lovely lot are armed with some macro-friendly BBQ recipes.

The folks over at Kezie were good enough to send us a selection of their new meats to try – Ostrich, Buffallo, Veal … I know. Tres exotic.

We were particularly fond of the Ostrich meats – super high protein / low fat, and great flavour and texture-wise. So, we decided to whip up these summery Koftas using Ostrich mince.

If you don’t have a pack of Ostrich mince at your disposal, you could use lean beef mince – or lamb works a treat!

Remember to soak your skewers in water before you throw these spicy little buggers on the barbie. Very difficult to pick up an on-fire skewer.

Kofta Kebabs

Prep Time 45 minutes
Cook Time 10 minutes
Total Time 55 minutes

Ingredients

  • 450 g kezie ostrich mince
  • 1 small onion, grated
  • 3 tsp minced garlic
  • 3 Tbsp fresh parsley, chopped
  • 1 Tbsp ground coriander
  • 1 tsp ground cumin
  • 1/2 Tbsp ground cinnamon
  • 1/2 tsp ground allspice
  • 1/4 tsp cayenne pepper
  • 1/4 tsp ground ginger
  • salt & pepper, to taste
  • 9 bamboo skewers, soaked in water for 30 minutes

Instructions

  1. In a large bowl, combine the mince with the garlic, onion, parsley and spices.

  2. Once combined, split the mixture into 9.

  3. Thread your mince mixture onto the prepared skewers, pressing and moulding until they look like the ones in our picture.

  4. Repeat with all 9 skewers, then refrigerate for at least 30 minutes, longer if you have the time (up to 12 hours).

  5. Cook the skewers under the grill on high heat, turning once. Serve when golden brown and cooked-through - around 7-9 minutes.
