Hi-Pro High Protein Banana Bread

I haven’t made a recipe for a while. It’s not because I haven’t wanted to either and in actual fact, making this made me realise just how much I miss cooking (and how I’m committing to do more this year). Cooking has always been a hobby for me and simply hasn’t been a priority since moving to a new facility and expanding my co-owned personal training business The Performance Project.

We moved to a much bigger facility in May last year and funnily enough my last recipe was in……….. May last year. Now the dust has settled somewhat, I want to get back into cooking (and maybe even some blogging) and creating some awesome recipes for all the readers and my clients.

As if I needed an excuse, the guys over at Hi-Pro Nutrition (hipronutrition.co.uk) sent me out some samples and asked me to whip something up for them which resulted in this amazing High Protein Banana Bread.

And it turned out great. The mix seemed quite wet but I knew the inclusion of coconut flour would soak everything up. I know if my flat ever floods, to throw coconut flour everywhere and I’ll be okay!

Fortunately the bananas and peanut butter kept this bread moist and packed with protein!

Hi-Pro High Protein Banana Bread

Cook Time 50 minutes

Ingredients

  • 4 large bananas, very ripe
  • 50 g coconut flour
  • 30 g protein powder
  • 2 large eggs
  • 100 g Hi Pro Peanut Butter
  • 2 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • pinch salt

Instructions

  1. Preheat oven to 160C and line a loaf tin with cooking spray and parchment paper (or use silicone to avoid the mess!)

  2. Mash bananas in a bowl but be sure to leave some big bits

  3. Add eggs and whisk in

  4. Add the rest of the ingredients and stir well until well mixed.

  5. Place in the oven for 45-50 minutes or until top is golden brown

  6. Remove to cool at room temperature before cutting into 10 slices
