Following on from my Apple & Mango Chutney recipe I now bring you the inspiration for that recipe.
Maybe it is something to do with my taste buds changing because of my contest prep (which you can follow on YouTube here) or maybe I was just having a nostalgic moment. Either way for some reason I was hugely craving some coronation chicken. I use to have this ALL the time when I was younger but have avoided it ever since due to the fact mango chutney is typically super high in calories.
Fortunately, because of the changes I made, using a lower calorie mango chutney and mayonnaise means this is nowhere near as bad as you might think and certainly nowhere near as many calories as it tastes!
I paired this up with a Jamie Oliver style “salad on a chopping board” but this works equally well in a sandwich or wrap for a tasty meal on the go!
- 600 g chicken breast, diced
- 100 g extra light mayonnaise
- 75 g mango chutney (my recipe is the best ;))
- 1 tsp curry powder
- 2 tsp lime zest
- 4 Tbsp lime juice
- 1/2 tsp salt
Cook the chicken and allow to cool
Meanwhile combine the other ingredients and mix well
Add the cooled chicken to the rest of the ingredients and combine well until all chicken is covered
You can save time by using pre-cooked chicken if you'd prefer! Nutritional Information per serving: Calories: 212 / Protein: 34g / Carbohydrates: 13g / Fat: 3g
