Has a cracking BBQ yesterday as I went about clearing my freezer for my imminent move out. It’s amazing what you find nestled at the back (stuff you’ve probably bought more of since!).
It was also a great opportunity to try out the new fresh watermelon and coconuts now available at Iceland (not all stores mind). I’m still amazed how much more they do than just turkey twizzlers and smileys faces. There seems to be more and more new stuff every week.
I’m particularly interested in the fresh coconuts. The last time I had a fresh coconut I was walking on the beach in Phuket, Thailand at a wedding. I like coconuts, not so much that I want to spend a few hundred quid to get back out there though (although the beach would be nice).
Fortunately, if I want my fresh coconut fix, all I need to do now is pop down the road. Happy days….. and happy wallet.
Coconut water had grown in popularity recently, mostly in part due to it’s potassium content and hydrating properties. Funnily enough, watermelon has too with a few watermelon based drinks popping up on the market. Bet hey, why not make your own and know exactly what is going in it?
A squeeze of lime juice and sprig of mint and you’ve got yourself an #InstantSummer
Coconut Watermelon Coolers
- 1 fresh coconut, water from
- 50 g watermelon
- 1 lime, juiced
- fresh mint, to garnish
Carefully cut open the fresh coconut and pour the contents into a blender
Cut the watermelon into slices and discard the skin, adding the flesh to the blender
Squeeze the juice of a lime into the blender
Serve with fresh mint to garnish
You could also add some mint to the blender for more flavour!
