Ingredients

  • 500 g Bison / Extra Lean Beef Mince
  • 400 g chopped tomatoes
  • 400 g red kidney beans
  • 1 large red onion diced
  • 1 sweet red pepper chopped
  • 2 cloves garlic minced
  • 300 ml beef stock
  • 1 tbsp splenda / stevia / sugar (optional)
  • 2 tsp chilli powder
  • 1 tsp ground cumin
  • 1 tsp paprika

Instructions

  1. In a non-stick pan, cook the onions over a medium heat until soft. Add the garlic, pepper and spices. Stir and cook for a further 5 minutes.

  2. Add in the mince (can substitute) and brown for 5 minutes.

  3. Pour in the beef stock along with the chopped tomatoes and tomato purée. Bring to the boil and simmer for 20 minutes.

  4. Finally add in the kidney beans and season to taste. Cook for a further 10 minutes and serve.
