Now I am fond of a burrito, I was talking to a friend the other day and we both agreed it’s because of the “stodge factor”. Unfortunately, I am yet to find any super size tortillas that aren’t incredibly calorie dense, the small ones just aren’t good enough. So I decided to go for the next best thing and go with a “Chicken Burrito Bowl”.
This is a well balanced meal with plenty of good fats from the avocado and lots of fibre from the black beans. This is so easy to make and if you have left over rice and chicken it can be very quick too!
Chicken Burritio Bowl
- 40 g Basmati rice
- 100 g chicken breast, diced
- 100 g black beans, drained and rinsed
- 1/2 avocado
- 2 Tbsp Salsa
- 1 clove garlic, minced
- 1/2 lime, zest and juice of
- coriander leaves, optional garnish
Prepare the rice as instructed then add some fresh coriander and a teaspoon of lime juice or juice of half a lime. Place into a container with a lid to allow the rice to continue steaming.
Cook chicken the way you prefer, I like to grill the chicken for 10-12 minutes with some fajita spice mix for an extra kick.
Drain the black beans and warm through in the microwave or oven.
Mash half the avocado along with the minced garlic clove.
Remove the rice from the container, where it should now have been infused with the lime and coriander, and place in a bowl.
Now add the black beans.
Shred the cooked chicken and add to create the next layer.
Add the salsa and avocado mix and top with sour cream (optional, not included in nutritional information).
