Nope.
I’m still over here furiously waving the ‘you don’t have to eat rabbit food to get into shape’ flag!
If you’re already feeling more than a little de-motivated by a painfully dull diet, don’t worry.
I’ve got the perfect antidote!
Caprese Chicken – aromatic, tangy and sweet. And filling. Paramount if you’re trying to cut back a smidgen.
I know what you’re thinking. Cheese? On a diet?
Oh yes. Pop to the shop and grab yourself a packet of low-fat mozzarella that you can find most anywhere these days. (You probably already have the rest of the ingredients in your cupboard!)
Making simple swaps will make the world of difference, and you’ll suddenly find that you can have foods that you think are ‘bad’ for you.
Be sure to make the most of spices and seasonings too, whether you’re dieting or not!
I coated my chicken in dried spices before searing it, and added a dash of balsamic vinegar to it’s lovely bath which totally brings the tomatoes to life!
A couple of leafy greens and a few tommies and you’re away.

Caprese Chicken
Ingredients
- 2 chicken breasts
- 1 tsp dried oregano
- 1 tsp dried basil
- salt and pepper, to taste
- 1 tsp garlic, minced
- 5 Tbsp balsamic vinegar
- 400 g plum tomatoes, tinned
- 60 g light mozarella
- fresh basil and cherry tomatoes, optional garnish
Instructions

Preheat your oven to 200C.

Season chicken breasts with the oregano, basil, salt and pepper.

Pour your plum tomatoes into a casserole dish and spread to cover the base. Season with pepper.

Set an non-stick pan over a medium-high heat, and add some cooking spray. Sear the seasoned chicken on both sides until golden brown, around 2 minutes per side.

Transfer chicken to the casserole dish, laying gently on top of the tomatoes.

Return the pan to the hob; fry garlic until fragrant (about 1 minute). Add the vinegar; stirring until heated through. Bring to a simmer, stirring occasionally, until glaze has thickened (2-4 minutes).

Pour the glaze over the chicken and use a fork to ripple some through the tomatoes.

Transfer to the oven and bake until the chicken is completely cooked through (about 20 minutes).

Top each chicken with your sliced mozzarella cheese and return to the oven for a further few minutes, just until the cheese has melted

Garnish with basil and sliced cherry tomatoes to serve.
