So the guys over at Musclefood were kind enough to send me out a box of grub a few weeks back out of the kindness of their heart (and for me to plug on my website and social media, obviously).
I’ve been using Musclefood for a couple of years now and whilst it hasn’t always been plain sailing (they have got my order wrong a few times) it’s still my go to place for picking up good quality meat at decent prices, unless of course I pick up some supermarket reduced bargains which you guys know I love!
I’d love to say that this recipe uses some fancy meat that you can only get from musclefood but in reality, it’s just chicken. The only difference being these are their mini chicken fillets. It’s just chicken but mini.
I thought it would be a good excuse to make an American favourite that I love whenever I visit the US of A, Buffalo Style Chicken. Now this is typically deep fried in crispy batter but as this was getting on to the end of my contest prep, I would have been eating air for the rest of the day so I thought I would do without.
I also paired it with the traditional side of blue cheese dressing but again, without all the fat. Hence the “skinny”.
No, it’s not the same as crispy deep fried chicken and full fat dressing but when you consider just how tasty and low calorie it is. It does make me wonder whether the original is worth all the fat!
Buffalo-Style Chicken & Skinny Blue Cheese Dressing
- 1 1/2 tsp garlic powder
- 1 1/2 tsp paprika
- 1/2 tsp chilli powder
- 1/8 tsp ground black pepper
- 400 g musclefood mini chicken fillets
- 1/4 cup Frank's Buffalo-Style Hot Sauce
- 4 celery stalks, trimmed to 4" batons
- 4 Laughing Cow light blue cheese triangles
- 100 g 0% fat Greek yogurt
- 1 Tbsp extra light mayonnaise
- 1 Tbsp lemon juice
- 1 tsp white wine vinegar
- 1/8 ts[ garlic powder
- salt & pepper, to taste
Place the chicken in a bowl and add the spices, mixing thoroughly until the chicken is coated.
Heat a non-stick pan on the hob, medium-high heat, and cook the chicken for 5-6 minutes on each side or until cooked through.
Plate-up the chicken and serve with Frank's hot sauce.
Place all ingredients in a bowl.
Using a fork, combine ingredients until a creamy consistency is achieved.
Serve immediately, or refrigerate for later.
