Lots of people struggle to find ways of flavouring chicken whilst keeping the calories down. Many store bought sauces are loaded with sugar and very calorie dense. Balsamic vinegar has next to no calories but still has a very strong, distinct flavouring making it ideal for those on a diet.
Throwing in some roasting veg and spices makes this Balsamic Chicken Tray Bake an easy to prepare, low calorie, high protein all in one meal.
Balsamic Chicken Traybake
- 600 g chicken breasts, whole
- 1 green pepper, sliced
- 1 red pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 100 ml chicken stock
- 60 ml balsamic vinegar
- 1 tsp dried oregano
- salt & pepper, to taste
Preheat Oven to 160C
Spray a roasting tray with non stick cooking spray and arrange the chicken breast evenly
Fry the onion, peppers and garlic over a medium heat for 3-5 minutes or until slightly softened
Transfer to the tray
Pour over the stock and vinegar and sprinkle with oregano then season to taste
Roast in the oven for 25 minutes or until chicken is cooked
Baste regularly for more flavour
