If there are two things I love when it comes to food it’s American cuisine and hot stuff. Nutritionally speaking, hot stuff isn’t an issue but American food generally is (they aren’t one of the fattest nations in the world by accident!) which is why I went looking for alternatives. These Baked Buffalo Chicken bites take all the great taste of original buffalo wings without the calories.
Tomato based sauces, salsa and hot sauces are on the whole pretty low calorie and with the combination of spices they give you a lot of flavour. I also chose to use a slice of Hovis Nimble bread, a reduced calorie version. Ideally I you want to be getting as few calories as possible from processed foods so this is an easy way to save yourself some!
Baked Buffalo Chicken
- 200 g chicken breast, diced
- 1 slice reduced calorie bread
- 2 tbsp Frank's Buffalo Hot Sauce
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cayenne pepper
- 1 tsp back pepper, ground
Preheat the oven to 180C.
Combine the breadcrumbs and spices in a shallow dish or bowl.
Combine the chicken and buffalo sauce in a separate dish, the sauce is going to act as your "binder".
Place the chicken one by one into the breadcrumbs and spice mix then on to a lined baking tray.
Bake in the oven for 18-20 minutes, turning half way through.
