Apple, Cranberry & Walnut ‘slaw

You lovely lot know that I’m super into making my own burgers.

But, that doesn’t mean I don’t like somebody else to take the burger-reins every once in a while.

Especially if they are fancy burgers. I’ll happily let somebody else make me a fancy burger and I’ll chow down on that bad boy, no problemo.

So, imagine my delight when we dived into the parcel that Musclefood kindly sent us, and found some juicy-looking Pork & Apple Burgers. Fat-Free, Pork & Apple Burgers.

Obviously I had to come up with something tres interesting to pair these special morsels with. I’m happy to report, I think I nailed it.

Ready for the money shot..? Of course you are.

Phwoar.

I’ve really come around to the sweet / savoury combo lately. If you have any reservations, trust me – this stuff will convert you. Crunchy, creamy, a little sharpness from the vinegar to offset the sweet of the apple and cranberry, and a mouth-watering texture with a little help from those walnuts.

FYI – The Musclefood burgers are a winner.

Buy them, make the ‘slaw, stuff them in these buns, and be wallow in sweet & savoury bliss.

Apple, Cranberry & Walnut Coleslaw

Ingredients

  • 130 g white cabbage, finely sliced
  • 1 medium apple, grated
  • 1 medium carrot, grated
  • 35 g dried cranberries
  • 20 g walnuts, roughly chopped
  • 20 g 0% fat Greek yogurt
  • 40 g light mayonnaise
  • 1/2 Tbsp white wine binegar
  • pinch salt

Instructions

  1. Throw your prepared vegetables into a large bowl along with the apple, cranberries and walnuts and toss together.

  2. Add the yogurt, mayonnaise and white wine vinegar and stir until combined.

  3. Season with salt to taste.

    It's that simple!
